If you haven’t seen PONTYPOOL yet, you should give it a watch. The “zombies” in the film are people infected with a virus that exists in language, which makes them violently insane. Most of the action occurs offscreen and is described through language–quite powerfully. About a year ago, the Zed Word interviewed Tony Burgess, the author of the novel on which the film is based, as well as the screenplay.
